It uses an innovative indirect steam cooking stystem that ensures food does not burn or stick, and the cooking temperature remains constant and never exceeds a certain temperature, which helps preserve taste and nutrients. The hallmark of these cookers is the double-walled 18/10 stainless steel construction. There is a hollow space between the inner and outer walls. You fill this cavity with a small amount of water via a specialized funnel. A gravity-controlled valve regulates the pressure within that cavity. As the water in the cavity boils, it creates a "steam jacket" around the inner pot. This keeps the internal cooking temperature at a constant 105°C.
